- Lactose, or milk sugar as it is commonly known, is broken down in the intestine by the enzyme lactase. Individuals with lactose intolerance are unable to produce adequate amounts of lactase enzyme in order to fully digest the lactose found in dairy products. As many as 15% of people of northern European descent are lactose intolerant and this level is much higher in other ethnic groups, especially Asian and Black populations. Common symptoms include abdominal cramping, belching, flatulence and diarrhea.
